What Exactly Are St. Louis Style Ribs?

These have become very popular in recent years

We are talking pork ribs here, just to be clear.

Most people really enjoy the flavor and size of the Baby back ribs.  Baby back ribs are really known as loin back ribs.  The "baby back" terminology probably comes from marketing firms, restaurants and grocery stores. 

True, they are very tender and moist.  They also cook quicker and you can get more on the grilling surface.  Spare ribs, on the other hand, are less expensive, larger and take up more room on the grill.  What most people have against the spare rib is the fatty end that is also a little grisly. The best part of the spare rib is the meat end making up about 3/4ths of the rib.

Now St. Louis style ribs are not another type of a rib, but is cut from the spare rib. Take your spare rib and turn it over.  On the back side, you will notice a flap of skin running the length of the spare rib.  Under that flap of skin there is a separation in the bones that can be easily sliced to remove the fatty end of the spare ribs.  What you have left are the St. Louis Style Ribs!

Some grocery stores will sell St. Louis style ribs, but most will not.  What you might be able to do is request they take the spare rib and cut it for you.  You will have to pay for even the removed portion, but it will save you from performing the task yourself.

BTW, the leftover portion can also be cooked if you wish.  The are most often called "Riblets".
