When Is The Steak Done?

How is the best way to know the steak's doneness

There are several good ways to determine when a steak is done.  It mostly depends upon your comfort level or experience level on cooking steaks.

The following are some general guidelines for determining how done a steak is.  We believe the only true way to determine the internal temperature of a steak is to use a quality meat thermometer and insert it into the deepest part of the meat to obtain an accurate reading.

Before we move on, we would be remiss in not mentioning that a steak (or any meat for that matter) will continue to cook for a while after removing it from the heat.  The outside will always be hotter than the inside because of the proximity of the heat.  The heat then travels into the meat thus continuing to cook "for a while".  The thicker the meat, the more it continues to cook after removing from the fire.

Ways to determine internal meat temperatures:

  1. With A Thermometer: As we mentioned above, use a quality meat thermometer inserting it into the thickest part of the meat.
  2. By Touch: A rare steak will feel like the area between the thumb and index finger with the hand relaxed.  For medium-rare, feel the same area of the hand with a loose fist. For medium, tighten the fist and then feel the same area.

Other: Medium-Rare = 145°,  Medium = 160°  and well done is 170°
