It doesn't matter much because we, as a species, find both forms a source of nourishment. Can you imagine how many chickens there must be on this earth to produce all of the poultry that America and other countries consume each year? One reason for its popularity is its relatively low cost to produce and two, how quickly it reaches maturity. It is the most common form of poultry in the world. Chickens can be roasted, fried, made into soup or added to rice or salads. One of my personal favorites is the almighty buffalo wings. Interesting enough, the first images of the chicken were depicted on seventh century BC pottery. There are several types of chickens worth noting. Young chickens as young as four weeks are used as Cornish hens. When they reach 8 to 9 weeks they are the size for fryers and when they reached 12 weeks they are roasters. The most common parts of the chicken processed for food of the breast, legs, thighs and wings. Also eaten are the liver, heart, and gizzards. Less common parts eaten are the feet, necks and other unmentionables. More often than not, you will grill or roast chicken parts or chicken quarters. The real fun begins when experimenting with the various methods and manners of cooking chicken. One of the newest, most fun methods of cooking chicken, has been to cook a whole chicken over I can filled with beer and other spices. It is commonly called beer butt chicken or chicken on a throne. A couple of cautionary notes. Raw chicken should be handled carefully as it often contains salmonella which can make you very sick. Wash hands thoroughly after handling and cook until completely done. Another hazard are the bones as they become brittle and break into sharp spears when they are eaten.
