Pork Chops Are Lean Delicious Steaks

The Other White Meat

Pork chops, or "pork loin chops", usually include a large T-shaped bone in the middle which is quite similar to the T-bone steak. The rib chops come from the rib portion of the loin which is also the same locations as the ribeye steaks.

There is a common fear, or belief, that if you don't cook a pork chop until it is well done it will make you sick. There is obviously more fear in this statement than actually exists in real life. Otherwise most of us might be dead at this point in time.  That's not to say you should not cook them thoroughly!

If you cook your chops to about 150°F in the thickest portion of the meat and not touching the bone, allowing the chop to sit for 5 minutes prior to serving, this should be more than sufficient for a juicy tender and safe pork chop.

Pork chops can be roasted, grilled, fried, or even stuffed. They can be bone-in or bone-out. Many believe that the bone in pork chops taste much better because the bone helps to make the meat juicer by retaining the moisture inside. Others believe that the bone, during the cooking process, releases additional flavors.

Pork chops are usually cut between 1/2 inch to 2 inches thick. Should you overcook your pork chops you will be successful in creating a tough, chili pork chop.
