The most popular cuts of pork which are consumed in the United States consists of bacon, ribs (loin, spare & St. Louis cut), (pork) loin, tenderloin, ham, butt, shoulder and, of course, whole hog. We have all heard that pork is "the other white meat", but did you realize that the USDA treats pork as a red meat? The marketing community should be ashamed of themselves. BTW, that slogan was retired this year (2011). Pork, like chicken, should be cooked thoroughly. You probably don't want to know that the pig can harbor E. coli, salmonella, and other types of bad things. The bottom line is to cook it thoroughly and enjoyed it. Once cooked completely there are no more problems from possible illness. Pork is one of the most commonly eaten meats in the world and accounts for about 40% of meat production. Fortunately for those of us who enjoy pork, there are several religious groups which do not consume pork. It is not permitted in the Jewish or Islam faiths. Additionally Seventh-day Adventists and other smaller nominations don't eat pork.
