We're not sure that is right or not, but we choose to grill tomatoes as often as we can! 2 firm, ripe tomatoes - cut in half around the middle
Gently dislodge and remove the watery pulp and seeds leaving the ribs and center intact. Fingers work really great for this purpose! Preheat your grill for medium-high heat because we will be doing direct grilling. If the bars of your your food grates are close enough, go ahead and place the tomatoes directly on the grate. If not, you may also want to consider using a grilling basket Brush both sides of the tomatoes with olive oil and then season the cut side of the tomatoes with the salt and pepper. Finally, brush the grill grate or grill basket with olive oil. Place tomatoes, cut side down, on the cooking surface. Close the lid and let cook for about 4 minutes, checking every minute so as not to allow them to burn! Use a spatula to remove the tomatoes from the grill. Place on a serving dish, cut side up and drizzle a little on a little more olive oil and sprinkle with the thinly sliced basil. |
