In a small bowl, thoroughly combine all of the ingredients, with the exception of the eggplant. Next, cut the eggplant lengthwise into about 1/2 inch thick slices and brush the sliced eggplant on both sides with the marinade mixture you just made. Let sit for 5 to 10 minutes to soak up the flavors. Fire up your grill for a medium-hot fire. Just before placing the eggplant on the grill directly over the heat, again brush them with the marinade and place on the grill. Grill for about 7-9 minutes on each side and serve hot and fresh! |
