Pineapple Glazed Chicken BreastsShades of HawaiiUse fresh pineapples if you desire, but either way, this wonderful recipe combines all of the great flavors of the South Seas. You will enjoy making this recipe over and over. Get ready for rave reviews. 8 approximately 6 ounce boneless, skinless chicken breasts
First, begin with a rum punch! Next, drain pineapples and reserve the juice. Salt and pepper chicken breasts to taste. In a sauce pan place the pineapple juice, brown sugar, mustard and just enough water to make the entire amount about a cup. Bring to a light boil. Then, reduce your heat and add the lemon juice, Worcestershire sauce and cornstarch mixture. Simmer until thick. Stir constantly. Fire up your grill for medium heat. Brush sauce on chicken breasts and place on a prepared grill. Brown chicken for several minutes on each side, brushing on more sauce. Place the pineapple rings on the grill and cook both sides until warm and tender. Each time you turn the chicken and pineapple, baste with your sauce. When done place the pineapples on top of the chicken breasts and allow to rest about five minutes before serving.
