Prepare your stuffing in one sitting and then stuff the chops later in the day. You will enjoy the journey to some savory stuffed pork chops! 4 - 2-inch thick pork chops, bone-in rib loin chops
In a large skillet, begin frying bacon. When the bacon is mostly done and a little crispy, add celery, onion and garlic to pan and allow to cook with the bacon. Add the rosemary, sage and parsley after bacon has cooked for 8 to 10 minutes. Saute all. Season with the salt and pepper. In a large bowl add cornbread and chicken stock. Stir in the vegetable you just sauteed. Mix well. Preheat grill to medium-high heat. While the grill is heating, split the chops to the bone and season with salt and pepper to fit your tastes. Stuff each chop with about 1/2 cup of stuffing. It might be helpful to use toothpicks to hold the pork chops together. Grill the chops for 5 to 7 minutes per side until done. Allow chops to rest for 5 minutes before serving. |
