First, we are going to grill these filets and just before they are completely cooked, we are going to move them over and add some serious smoky flavor. You will want to try these over and over! 4 really nice sized catfish filets, skinned and de-boned
Before we get started, soak the wood chips in water or even apple juice for about 1 hour. While those are soaking, go ahead and fire up your grill and get it to a medium-hot temperature. With a pastry brush, apply a liberal coating of the olive oil on all sides of the catfish and then sprinkle with the dry rub. Place the fillets on the grill and establish some really nice grill marks. Once you have finished this, next place the catfish into a cooking tray or sizzle platter over indirect heat (not directly over the heat). Add the soaked hickory wood chips directly to the fire and get some smoke in the pit. Close the lid to keep the heat and smoke on the filets. Smoke the filets for about 4 minutes to get the smoky wood flavors going. Remove and serve with your favorite salad, hush puppies or French fries! |
