First and last names are really important so we can notify you!Tequila Sauced Flank SteakMake 'em into Fajitas!We are going to be adding some great Mexican flavors to this meal with our tequila, cilantro, jalapeno, cumin and lime juice. I bet you can taste it right now! You might want to consider doubling the recipe and cooking even more! 1 1/2 to 2 pounds flank steak (tenderized if possible)
Thoroughly mix the garlic, lime juice, tequila, soy sauce, cilantro, peppers, roasted cumin, salt and black pepper in a 1 gallon zip lock plastic bag. Add the steak and let marinate in refrigerator for 2 to 6 hours - turning occasionally. While the grill is heating up, remove the steak from refrigerator, and let it continue to marinate at room temperature for another 30 to 45 minutes While warming, fire up your grill to a medium-hot temperature. Remove steak from marinade, and keep the marinade. Place marinade in a small sauce pot and bring to a boil for 1 minute. Strain the solids and keep warm. It will be used to pour over the meat. Warm the wrapped tortillas in the oven or grill and heat thoroughly. Place steak on the grill and cook turning occasionally until the desired doneness has been reached. Remove, let rest. Slice against the grain. Serve with warmed marinade , grilled onions, guacamole, lettuce, tortillas, and anything else you enjoy with your fajitas or flank steak. |
