Wake Up Coffee Smoked Brisket

Cup of Joe anyone?

We want to use only the freshest ground coffee for this recipe.  If the coffee grounds are used,the flavor will not be fresh and will only muddy up the recipe.  Use your favorite blend and enjoy this nice recipe.

   1 trimmed brisket

  • 2 tablespoons paprika
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 2 tablespoons black pepper
  • 2 tablespoons sugar
  • 2 tablespoons fresh ground coffee
  • 2 tablespoons kosher salt
  • 1 tablespoons mustard powder
  • 1 tablespoons fresh ground black pepper
  • 1 tablespoons. chili powder
  • 1 teaspoon cayenne pepper powder

In a non-reactive container, combine the above ingredients thoroughly. Trim excess fat from the brisket and season 2  hours before putting it on the pit.

Get your pit going steady at 225° to 250° with indirect heat (heat on one side and the meat on the other side).

If refrigerated, remove the brisket from the refrigerator about 2 hours before ready to cook.

Place the brisket on the non-heat side and cook until it reaches about 190° in the center.  Baste occasionally with a 50-50 mixture of butter and apple juice.

For more smoke flavor, we suggest using wood chunks:  Pecan, Apple, Hickory, Cherry, or Oak.  Don't over smoke.

Recipe makes enough brisket dry rub for one large beef brisket.

A TIP FOR THE BEGINNER: When selecting your brisket, choose a smaller one for easier cooking and less cooking time.  You might also want to consider cooking a "flat" and not the entire brisket.  A flat is the leanest part of the brisket and is much smaller.
