By connoisseurs, they are revered for their flavor and texture. That would perhaps explain why their cousins, the crawfish, are so popular! 4 8-ounce lobster tails
This recipe yields 4 servings. Rinse and pat dry the lobster tails with paper towels. With the shell side down and claws up, butterfly the tails by cutting in half lengthways all the way to the shell, but do not cut the shell itself. Pry the tails open to "crack the back of the shell". Keep the shell together. Brush the meat with olive oil. Go fire up your grill for a nice medium heat. When ready make an even layer of coals. Gas grill guys, simply pre-heat the grill and then turn down to medium. While the fire is heating up, melt the butter in a small sauce pan over a low heat. Do not stir the butter as it melts. Allow it to cool slightly and remove the clear portion of the butter and discard the cloudy part of the butter. What you have left will be clarified butter. In a smaller bowl, combine the clarified butter, basil, walnuts and garlic. Stir thoroughly. When finished cooking, remove the lobsters and place shell side down on a serving plate. Pour or spoon your butter sauce over the meat and serve. |
